A beautiful expression of our terroir this wine displays good balance of fresh stone fruit and bright citrus notes with a fleshy textured palate and engaging length. An elegant and refined style of Chenin Blanc. The grapes come from a 13 year old trellised, single vineyard on the lower part of the farm, situated at 300m above sea-level. The soil consists mainly of sandstone layered with a clay-shale which adds a unique element to this heritage varietal. Two different harvest dates allow us to build natural complexity. Harvested by hand and cooled overnight. The grapes are whole bunch pressed for gentle extraction. Juice is settled overnight. During racking enough fine lees is added to the clear juice to ensure enough texture in the finished wine.Natural fermentation further enhances the complexity. 70% fermented aged in 2000-liter oak foudre, 10% in new 500-liter French oak barrels, 10% in 2nd fill 500-liter Hungarian oak, 10% older 500-liter French oak. Maturation for 10 months on gross lees. alc 13.0
